Ingredients

  • 1 small onion, finely chopped
  • 3 medium carrots, diced
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 1 (15 oz.) can pinto beans, drained and rinsed
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • ¾ to 1 teaspoon kosher salt (to taste)
  • ¼ teaspoon black pepper (optional)
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1½ teaspoons onion powder
  • ¼ teaspoon turmeric
  • ¼ teaspoon smoked paprika
  • 1 cup crushed tomatoes

For Garnishing:

  • Blue corn tortilla chips
  • Sliced jalapeños
  • Chopped fresh parsley

Instructions

  1. Sauté the Vegetables:
    • Heat the olive oil in a large pot over medium heat. Add the chopped onion and diced carrots. Sauté for about 5 minutes, or until the onions become translucent.
  2. Add Tomato Paste and Spices:
    • Stir in the tomato paste, garlic powder, chili powder, cumin, oregano, onion powder, turmeric, smoked paprika, salt, and black pepper. Cook for another minute to allow the spices to become fragrant.
  3. Combine Remaining Ingredients:
    • Add the vegetable broth, crushed tomatoes, pinto beans, and black beans to the pot. Stir well to combine all ingredients.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 15 minutes, allowing the flavors to meld together. If you prefer a thicker consistency, you can let it simmer a bit longer.
  5. Serve:
    • Ladle the chili soup into bowls and garnish with blue corn tortilla chips, sliced jalapeños, and chopped fresh parsley as desired.

Tips for Customization

  • Add More Beans: Feel free to mix in other types of beans like kidney or cannellini beans for added variety.
  • Spice Level: Adjust the amount of chili powder or add fresh jalapeños if you prefer a spicier kick.
  • Vegetable Additions: Incorporate other vegetables like bell peppers or corn to enhance the nutritional value and texture.
