Homemade Vegetarian Oyster Sauce Recipe

Vegetarian oyster sauce is a fantastic alternative to traditional oyster sauce, providing the same rich umami flavor without any animal products. This easy recipe uses dried shiitake mushrooms as the base, making it perfect for stir-fries, marinades, and various Asian dishes. Here’s how to make it at home!

Ingredients

  • 1 oz. dried shiitake mushrooms (about 10 pieces)
  • 2 cups hot water
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 3 tablespoons agave syrup or brown sugar
  • 1 teaspoon miso paste (optional for added depth)
  • 1 teaspoon grated fresh ginger
  • 2 teaspoons cornstarch
  • 2 teaspoons cold water

Instructions

  1. Soak the Mushrooms:
  • Place the dried shiitake mushrooms in a bowl and pour hot water over them. Let them soak for at least 30 minutes until they are soft and plump.
  1. Blend the Mixture:
  • After soaking, remove the mushrooms from the water (reserve the soaking liquid) and chop off any tough stems. In a blender, combine the soaked mushrooms with the reserved soaking liquid, soy sauce or tamari, agave syrup or brown sugar, grated ginger, and miso paste (if using). Blend until smooth.
  1. Cook the Sauce:
  • Pour the mushroom mixture into a saucepan over medium heat. Stir occasionally and bring to a simmer.
  1. Thicken the Sauce:
  • In a small bowl, mix cornstarch with cold water until dissolved. Gradually whisk this slurry into the simmering mushroom mixture. Continue to cook for about 5 minutes, stirring constantly, until the sauce thickens and becomes glossy.
  1. Cool and Store:
  • Remove from heat and let the sauce cool before transferring it to an airtight container. Store it in the refrigerator for up to two weeks.
