Total Time: 35 minutes

Ingredients:

For the Fajitas:

  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime

For Serving:

  • 8 small flour tortillas (or corn tortillas for a gluten-free version)
  • 1 avocado, sliced (optional)
  • Salsa (optional)
  • Vegan sour cream (optional)
  • Lime wedges (optional)

Instructions:

1. Prepare the Vegetables:

  • Slice the onion, bell peppers, zucchini, and mushrooms into thin strips or half-moons. Mince the garlic.

2. Cook the Fajitas Vegetables:

  • Heat olive oil in a large skillet or frying pan over medium-high heat.
  • Add the onion and bell peppers to the skillet. Sauté for about 5 minutes, or until the vegetables start to soften.
  • Add the zucchini, mushrooms, and garlic to the pan. Cook for another 5-7 minutes, stirring occasionally, until all the vegetables are tender and lightly caramelized.
  • Sprinkle in the cumin, chili powder, paprika, smoked paprika (if using), salt, and pepper. Stir to coat the vegetables evenly with the spices.

3. Finish the Fajitas:

  • Squeeze the lime juice over the cooked vegetables and toss everything together.
  • Remove the pan from the heat and stir in the fresh cilantro for added flavor.

4. Warm the Tortillas:

  • While the vegetables are cooking, warm the tortillas. You can do this by heating them in a dry skillet for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving them for 15-20 seconds.

5. Assemble the Fajitas:

  • To serve, place a few spoonfuls of the sautéed vegetables on each tortilla.
  • Top with slices of avocado, a dollop of vegan sour cream, and your favorite salsa. Garnish with extra lime wedges and fresh cilantro if desired.

Tips for the Best Vegetarian Fajitas:

  • Add Protein: For extra protein, you can add black beans, pinto beans, or tofu strips to the fajita filling.
  • Grilled Option: For added flavor, you can grill the vegetables on a grill pan or outdoor grill instead of sautéing them.
  • Vegan Cheese: For a cheesy twist, add some shredded vegan cheese to the fajitas before serving.
  • Customize Your Veggies: Feel free to swap in other vegetables like sweet potatoes, corn, or spinach for added texture and flavor.
