Vegan Pasta e Fagioli (Pasta Fazool) Recipe

Pasta e Fagioli, also known as Pasta Fazool, is a traditional Italian dish that combines pasta and beans in a flavorful broth. This vegan version is hearty, nutritious, and easy to prepare.

Ingredients

  • Olive Oil: 1 tablespoon
  • Onion: 1 medium, diced
  • Carrots: 2 medium, diced
  • Celery: 2 stalks, diced
  • Garlic: 4 cloves, minced
  • Tomato Paste: 2 tablespoons
  • Canned Diced Tomatoes: 1 (28-ounce) can
  • Cannellini Beans: 2 (15-ounce) cans, rinsed and drained
  • Vegetable Broth: 5 cups (low sodium)
  • Fresh Oregano: 1 tablespoon, chopped (or 1 teaspoon dried)
  • Fresh Thyme: 1 tablespoon, chopped (or 1 teaspoon dried)
  • Bay Leaf: 1
  • Small Pasta (like Ditalini): 1 cup
  • Salt and Pepper: to taste

Instructions

  1. Sauté Vegetables:
  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for about 5–7 minutes until softened.
  • Stir in the minced garlic and cook for another minute until fragrant.
  1. Add Tomato Products:
  • Push the vegetables to one side of the pot and add the tomato paste. Cook for about a minute to deepen its flavor.
  • Stir in the canned diced tomatoes (with their juices), cannellini beans, vegetable broth, oregano, thyme, and bay leaf.
  1. Simmer the Soup:
  • Bring the mixture to a boil. Reduce heat to low and let it simmer for about 20 minutes until the vegetables are tender.
  1. Cook the Pasta:
  • While the soup simmers, cook the pasta according to package instructions until al dente. Drain and set aside.
  1. Combine and Serve:
  • Once the soup has finished simmering, remove the bay leaf.
  • Stir in the cooked pasta and season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if desired.

Tips

  • For a creamier texture, blend half of the beans before adding them to the soup.
  • Feel free to customize by adding other vegetables like spinach or kale.
  • This dish can be stored in the refrigerator for up to four days; however, keep pasta separate if you want it to maintain its texture.
