Ingredients:

  • 1 medium head of cabbage, chopped
  • ½ medium white onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegan butter (or olive oil)
  • 1 teaspoon liquid smoke (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • Salt and black pepper to taste
  • Optional: 8 slices of vegan bacon, chopped

Instructions:

  1. Prepare the Cabbage:
  • Rinse and chop the cabbage into small pieces, discarding any tough outer leaves.
  1. Sauté the Vegan Bacon (Optional):
  • In a large skillet, heat 1 tablespoon of vegan butter over medium heat.
  • Add the chopped vegan bacon and cook until crispy. Remove from the skillet and set aside.
  1. Cook Onions and Garlic:
  • In the same skillet, add another tablespoon of vegan butter.
  • Sauté the diced onion until translucent, about 3-4 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  1. Add Cabbage:
  • Stir in the chopped cabbage, liquid smoke, smoked paprika, brown sugar, salt, and black pepper.
  • Mix everything well to combine.
  1. Cook Until Tender:
  • Cover the skillet with a lid and let the cabbage cook for about 10 minutes, stirring occasionally.
  • After 10 minutes, remove the lid and continue cooking for another 5-10 minutes until the cabbage is tender but still has some crunch.
  1. Combine and Serve:
  • If using, add the cooked vegan bacon back into the skillet and stir to combine.
  • Taste and adjust seasoning if necessary.
  • Serve warm as a side dish alongside your favorite main course!

Tips:

  • For added flavor, experiment with different spices like cayenne or chili flakes if you enjoy heat.
  • This dish pairs well with cornbread or as a side to hearty grain dishes.
