Ingredients

  • 1 cup textured vegetable protein (TVP)
  • 1 cup vegetable broth (for rehydrating TVP)

  • 1 small onion, finely diced
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 1 tablespoon vegan Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (adjust to taste)

Instructions

1. Rehydrate the TVP

  • In a bowl, combine the TVP and vegetable broth. Let it sit for 5-10 minutes, until the TVP absorbs the broth and becomes plump. Set aside.

2. Sauté the Vegetables

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until it becomes translucent.
  • Add the mushrooms to the skillet and cook for another 3-4 minutes, until softened and lightly browned.

3. Add Seasonings and TVP

  • To the skillet, add the rehydrated TVP, soy sauce, tomato paste, vegan Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, and salt. Stir well to combine all ingredients.
  • Cook for 5-7 minutes, stirring occasionally, until the flavors meld and the mixture is heated through.

4. Adjust Seasonings and Serve

  • Taste and adjust seasonings if needed. Serve warm as a filling for tacos, burritos, or add it to pasta sauces, lasagna, and more.
