Servings: 8–10 slices
Prep Time: 10 minutes
Cook Time: 50–60 minutes
Ingredients:
- 3 large ripe bananas, mashed (about 1 1/2 cups)
- 1/4 cup coconut oil, melted (or any neutral oil)
- 1/4 cup plant-based milk (like almond, soy, or oat milk)
- 1/2 cup brown sugar or coconut sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour (or a gluten-free flour blend)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Prepare Wet Ingredients:
- In a large mixing bowl, mash the bananas until smooth. Add the melted coconut oil, plant-based milk, brown sugar, and vanilla extract. Stir until everything is well combined.
- Prepare Dry Ingredients:
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
- Combine Wet and Dry Ingredients:
- Add the dry ingredients to the wet ingredients and gently fold until just combined. Be careful not to overmix, as this can make the bread dense.
- Bake:
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Tips:
- Add-Ins: For extra texture and flavor, fold in 1/2 cup chopped nuts (like walnuts or pecans) or 1/2 cup vegan chocolate chips.
- Storage: Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
This Vegan Banana Bread is sweet, comforting, and easy to make—a perfect treat for any time of day!
