Ingredients:

  • 1 package of Impossible Burger (12 oz)
  • 1/2 cup breadcrumbs (use gluten-free breadcrumbs if necessary)
  • 2 tablespoons ground flaxseed + 6 tablespoons water (flax egg)
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for pan-frying or baking)
  • 1/2 cup marinara sauce (for serving, optional)
  • Fresh basil or parsley (for garnish, optional)

Instructions:

1. Make the Flax Egg:

  • In a small bowl, combine the ground flaxseed with 6 tablespoons of water. Stir well and let sit for 5-10 minutes to thicken.

2. Prepare the Meatball Mixture:

  • In a large mixing bowl, add the Impossible Burger, breadcrumbs, nutritional yeast, oregano, basil, garlic powder, onion powder, salt, and pepper. Stir well to combine.
  • Add the flax egg to the mixture and mix again until everything is well incorporated. The mixture should be sticky and easy to form into balls. If it’s too dry, add a little water; if it’s too wet, add more breadcrumbs.

3. Form the Meatballs:

  • Use your hands to form the mixture into meatballs about 1 to 1.5 inches in diameter. You should get around 12-14 meatballs, depending on the size.

4. Cook the Meatballs:

  • Pan-Frying Method: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs and cook, turning occasionally, for 8-10 minutes or until they are browned on all sides and cooked through.
  • Baking Method: Preheat your oven to 375°F (190°C). Place the meatballs on a parchment-lined baking sheet. Drizzle with olive oil or spray with cooking spray. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy on the outside.

5. Serve:

  • Serve the Impossible Meatballs with marinara sauce for dipping or on top of spaghetti for a classic vegan meatball dish. Garnish with fresh basil or parsley for extra flavor.
