Vegan AIP Pasta Recipe

Here’s a delicious vegan AIP pasta recipe that is both simple and satisfying: Easy Avocado Pesto Pasta.

Ingredients

  • 8 oz gluten-free (or grain-free) pasta
  • 1 avocado, halved and pitted
  • 1 cup arugula (or spinach)
  • 1 cup basil
  • 1 tbsp nutritional yeast (optional, omit for strict AIP)
  • 2 garlic cloves, peeled
  • Salt to taste (omit pepper for AIP)
  • Juice of half a lemon
  • 3 tbsp olive oil

Instructions

  1. Cook the Pasta: Boil the pasta according to package instructions until al dente. Reserve about 1/3 cup of the pasta water before draining.
  2. Make the Pesto: In a high-speed blender, combine the avocado, arugula, basil, nutritional yeast (if using), garlic, salt, lemon juice, olive oil, and reserved pasta water. Blend until smooth and creamy.
  3. Combine: Toss the cooked pasta with the pesto until thoroughly coated.
  4. Serve: Enjoy immediately, optionally garnished with additional fresh basil.
