Ingredients:

  • 4-6 bags of black or green tea (or loose-leaf tea)
  • 1 cup of sugar (for fermentation)

  • SCOBY (Symbiotic Culture of Bacteria and Yeast)
  • Flavored additions for second fermentation (e.g., ginger slices, berries, herbs, citrus peels)

Instructions (For Homemade Kombucha):

  1. Brew the Tea: Boil 4 cups of water and steep the tea bags (or loose-leaf tea) in the water for about 5-10 minutes. Remove the tea bags and stir in the sugar until dissolved.
  2. Cool the Tea: Let the sweetened tea cool to room temperature.
  3. Fermentation: Pour the cooled tea into a large glass jar (at least 1-gallon size). Add the kombucha starter tea and gently place the SCOBY into the jar. Cover the jar with a clean cloth or paper towel, securing it with a rubber band.
  4. First Fermentation: Allow the tea to ferment at room temperature for about 7-10 days. The longer it ferments, the more sour it will taste. Taste it after 7 days and ferment longer if desired.
  5. Second Fermentation for Flavor: Once the first fermentation is complete, remove the SCOBY and set it aside for your next batch. Pour the kombucha into bottles, leaving about an inch at the top. Add your chosen flavorings like ginger, berries, or citrus. Seal the bottles tightly.
  6. Carbonation: Allow the bottles to sit at room temperature for another 2-5 days to carbonate. Afterward, refrigerate them to stop the fermentation process.
  7. Serve and Enjoy: Chill your kombucha and enjoy it chilled! If you prefer a more effervescent drink, you can adjust the second fermentation time to your liking.
