Ingredients:

Instructions:
- Soak the Tiger Nuts:
Place the tiger nuts in a bowl and cover them with water. Let them soak for at least 24 hours. This softens the nuts and helps make the milk creamy and easier to blend. After soaking, drain and rinse the nuts. - Blend the Tiger Nuts:
Add the soaked tiger nuts to a high-speed blender, along with 4 cups of water. You can add a sweetener at this stage (such as maple syrup, agave syrup, or sugar) and a teaspoon of vanilla extract for added flavor, if desired. Blend everything on high for about 2-3 minutes until smooth and creamy. - Strain the Milk:
Using a fine mesh strainer, cheesecloth, or nut milk bag, strain the mixture into a clean bowl or pitcher. Squeeze or press gently to extract as much liquid as possible. - Store:
Transfer the chufa milk into a bottle or jar and store it in the refrigerator. It will last for about 3-4 days. Shake well before each use, as it can naturally separate. - Serve:
Pour into a glass and enjoy chilled! You can also use it in recipes as a dairy substitute.
