Chufa milk, also known as tiger nut milk, is a creamy, dairy-free beverage made from tiger nuts (also called chufa). This milk is naturally sweet, nutty, and rich in nutrients. It’s a great alternative to cow’s milk and can be used in smoothies, cereals, coffee, or enjoyed on its own.

Ingredients:

  • 1 cup tiger nuts (chufa)
  • 4 cups water (for blending)
  • 1-2 tablespoons sweetener (maple syrup, agave syrup, or sugar, optional)
  • 1 teaspoon vanilla extract (optional, for extra flavor)

Instructions:

  1. Soak the Tiger Nuts:
    Place the tiger nuts in a bowl and cover them with water. Let them soak for at least 24 hours. This softens the nuts and helps make the milk creamy and easier to blend. After soaking, drain and rinse the nuts.
  2. Blend the Tiger Nuts:
    Add the soaked tiger nuts to a high-speed blender, along with 4 cups of water. You can add a sweetener at this stage (such as maple syrup, agave syrup, or sugar) and a teaspoon of vanilla extract for added flavor, if desired. Blend everything on high for about 2-3 minutes until smooth and creamy.
  3. Strain the Milk:
    Using a fine mesh strainer, cheesecloth, or nut milk bag, strain the mixture into a clean bowl or pitcher. Squeeze or press gently to extract as much liquid as possible.
  4. Store:
    Transfer the chufa milk into a bottle or jar and store it in the refrigerator. It will last for about 3-4 days. Shake well before each use, as it can naturally separate.
  5. Serve:
    Pour into a glass and enjoy chilled! You can also use it in recipes as a dairy substitute.

Tips:

  • Adjust Sweetness: You can adjust the sweetness according to your preference, adding more or less sweetener.
  • Use Pulp: Don’t throw away the tiger nut pulp left after straining. You can use it in smoothies, baked goods, or even make tiger nut flour by drying it out.
  • Flavor Variations: For a spiced version, add a pinch of cinnamon or nutmeg while blending.
