Ingredients:

For the Seitan Roast:

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon ground thyme
  • 1/4 teaspoon ground black pepper
  • 3/4 cup vegetable broth (plus more for steaming)
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 tablespoon maple syrup (optional for a touch of sweetness)

For the Stuffing:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup fresh breadcrumbs (use gluten-free if needed)
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup chopped fresh sage
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup vegetable broth (or as needed)

Instructions:

Prepare the Seitan:

    • In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, onion powder, sage, thyme, and black pepper.
    • In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, tomato paste, and maple syrup (if using).
    • Pour the wet ingredients into the dry ingredients and stir to combine. Knead the dough for about 5 minutes until it becomes firm and elastic.
    • Shape the dough into a rectangle, about 1/2 inch thick, which will be large enough to roll around the stuffing.

    Prepare the Stuffing:

      • Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté until softened and fragrant, about 5 minutes.
      • Add the breadcrumbs, cranberries, sage, thyme, salt, and pepper. Stir to combine, then slowly add the vegetable broth a little at a time until the stuffing is moist but not soggy. Set aside to cool slightly.

      Assemble the Seitan Roast:

        • Lay the seitan dough out on a large piece of parchment paper. Spread the stuffing mixture evenly over the dough, leaving a small border around the edges.
        • Carefully roll up the seitan dough, starting from one edge, using the parchment paper to help you. Pinch the ends closed to seal in the stuffing.

        Steam the Roast:

          • Cut a piece of parchment paper to wrap the seitan roast in, and tie both ends with kitchen twine to keep the stuffing inside.
          • Steam the seitan roast by placing it in a steamer basket over boiling water. Cover and steam for 45–60 minutes, turning the roast halfway through cooking.

          Bake the Roast (Optional):

            • Preheat the oven to 375°F (190°C).
            • Once the seitan roast is steamed, remove it from the parchment paper and transfer it to a baking sheet.
            • Bake for an additional 20 minutes to crisp up the outside and enhance the flavor.

            Serve:

              • Slice the roast and serve it with your favorite vegan gravy or cranberry sauce.
