Ingredients:

  • 1 lb (450g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard (optional)
  • 1 garlic clove, minced
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  1. Prepare the Brussels Sprouts:
  • Trim the ends of the Brussels sprouts and slice them in half. If they are large, you can quarter them.
  • Place them in a bowl and toss with olive oil, salt, and pepper.
  1. Roast the Brussels Sprouts:
  • Spread the Brussels sprouts in an even layer on a baking sheet, cut side down.
  • Roast in the preheated oven for 20–25 minutes, or until the Brussels sprouts are tender and caramelized, stirring halfway through.
  1. Make the Maple Balsamic Sauce:
  • While the Brussels sprouts are roasting, combine the maple syrup, balsamic vinegar, Dijon mustard (if using), and minced garlic in a small saucepan over medium heat.
  • Stir occasionally and cook for 2–3 minutes, until the sauce slightly thickens.
  1. Toss and Serve:
  • Once the Brussels sprouts are roasted, remove them from the oven and transfer them to a serving dish.
  • Drizzle the maple balsamic sauce over the Brussels sprouts and toss to coat evenly.
  • Garnish with chopped parsley and serve warm.

Tips:

  • Optional Add-ins: For extra flavor, you can sprinkle some roasted nuts (like pecans or walnuts) on top before serving.
  • Make it Sweet or Tangy: Adjust the amount of maple syrup or balsamic vinegar depending on how sweet or tangy you like your dish. You can also add a splash of soy sauce for an extra savory boost.
  • Storage: Leftover Brussels sprouts can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.

These Maple Balsamic Brussels Sprouts are the perfect balance of savory, sweet, and tangy flavors, making them an irresistible addition to any meal!
