Vegan Croissant Recipe

Ingredients
For the Croissants:
- 4 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 packets instant yeast (about 4 teaspoons)
- 1 1/2 teaspoons salt
- 1 1/4 cups cold vegan butter (sticks preferred)
- 1 cup cold soy milk
For the Vegan Egg Wash:
- 1 tablespoon pure maple syrup
- 2 tablespoons soy milk

Step 1: Prepare the Dough
- In a large bowl, whisk together the flour, sugar, yeast, and salt.
- Slice the cold vegan butter into thin pieces and toss them into the dry mixture with a spatula.
- Pour in the cold soy milk and gently stir until a rugged dough forms with visible chunks of butter. Avoid using your hands too much to prevent melting the butter.
Step 2: Chill and Laminate the Dough
- Wrap the dough tightly in plastic wrap and chill in the refrigerator for about 1 hour.
- After chilling, roll the dough into a large rectangle (approximately 20 inches long and 10 inches wide).
- Fold the dough into thirds like a letter, then roll it out again into a large rectangle.
- Rotate the dough 90 degrees and repeat the folding and rolling process five more times. This creates layers of butter within the dough.
- Chill the laminated dough again for about 30 minutes.
Step 3: Shape and Bake the Croissants
- Divide the dough in half for easier handling. Roll one half into a large rectangle, trimming uneven edges with a pizza cutter.
- Cut this rectangle into smaller rectangles, then cut each rectangle into long triangles.
- Make a small slit at the wide end of each triangle.
- Starting from the wide end, tightly roll each triangle into a crescent shape, tucking the tip underneath.
- Place each croissant on a parchment-lined baking sheet, cover loosely with plastic wrap, and let them rise for about 1 hour at room temperature.
Step 4: Preheat Oven and Prepare for Baking
- Preheat your oven to 375°F (190°C).
- While croissants are rising, prepare the vegan egg wash by mixing maple syrup and soy milk.
- Brush each croissant with this mixture before baking.
Step 5: Bake
- Bake for about 25 minutes or until golden brown.
- Allow to cool slightly before serving.
