Vegetarian Egg Rolls Recipe

Ingredients

  • 1 package (18-count) egg roll wrappers (check ingredients to ensure they are vegan)
  • 2 tablespoons sesame oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups green cabbage, shredded
  • 1 large carrot, julienned
  • 1 red bell pepper, diced
  • 1 cup mushrooms, finely chopped (shiitake or button mushrooms work well)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce (optional, for heat)
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Prepare the Filling:
  • In a large skillet, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the garlic and ginger, cooking for another minute until fragrant.
  • Add the shredded cabbage, julienned carrot, diced bell pepper, and chopped mushrooms. Cook for about 5–7 minutes until the vegetables are tender.
  • Stir in the soy sauce, rice vinegar, and chili garlic sauce (if using). Cook for an additional 2 minutes. Remove from heat and let cool slightly.
  1. Wrap the Egg Rolls:
  • Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the vegetable filling near the corner closest to you.
  • Fold the corner over the filling, then fold in the sides and roll tightly away from you. Use a little water to seal the edge of the wrapper.
  • Repeat with remaining wrappers and filling.
  1. Cook the Egg Rolls:
  • For Frying: Heat oil in a deep pan or wok over medium-high heat. Once hot, carefully add egg rolls in batches, frying until golden brown on all sides (about 3–4 minutes). Remove with a slotted spoon and drain on paper towels.
  • For Baking: Preheat your oven to 400°F (200°C). Place egg rolls on a parchment-lined baking sheet. Lightly spray or brush them with oil. Bake for about 20 minutes, flipping halfway through, until golden brown and crispy.
