Serves: 4
Prep Time: 20 minutes (plus 30 minutes to marinate)
Cook Time: 10-15 minutes
Total Time: 1 hour
Ingredients
- For the Marinade:
- 1/4 cup olive oil
- 2 tablespoons soy sauce or tamari (for gluten-free)
- 1 tablespoon maple syrup or agave syrup
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- For the Kebabs:
- 1 block (14 oz) extra-firm tofu or seitan, cubed
- 1 red bell pepper, chopped into large pieces
- 1 yellow bell pepper, chopped into large pieces
- 1 zucchini, sliced into thick rounds
- 1 cup cherry tomatoes
- 1 red onion, cut into large chunks
- 8-10 white button mushrooms, cleaned and trimmed
- Fresh parsley or cilantro for garnish (optional)
Instructions
1. Prepare the Marinade
- In a bowl, whisk together the olive oil, soy sauce, maple syrup, balsamic vinegar, minced garlic, smoked paprika, cumin, black pepper, and salt.
2. Marinate the Ingredients
- Place the cubed tofu (or seitan) and vegetables in a large bowl or resealable plastic bag. Pour the marinade over them, gently tossing to coat all the ingredients. Let marinate for at least 30 minutes (or up to 2 hours for extra flavor), tossing halfway through.
3. Assemble the Kebabs
- Preheat your grill or oven to medium-high heat. If using wooden skewers, soak them in water for 10-15 minutes to prevent burning.
- Thread the marinated tofu and vegetables onto the skewers, alternating to create a colorful mix.
4. Cook the Kebabs
- For the Grill: Place the skewers on the grill, cooking for 10-15 minutes, turning every 3-4 minutes, until the veggies are tender and lightly charred.
- For the Oven: Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet and bake for 12-15 minutes, flipping halfway through until golden.
5. Serve and Garnish
- Serve the kebabs warm, garnished with fresh parsley or cilantro if desired. Enjoy as is, or with a side of hummus or tahini sauce for dipping.
Tips
- Extra Protein: Swap tofu for tempeh or add chickpeas to the marinade for a variety in protein.
- Storage: Leftover kebabs can be stored in the refrigerator in an airtight container for up to 2 days.
