  • 1 package of filo pastry (approximately 12-16 sheets)
  • 1 1/2 cups mixed nuts (e.g., walnuts, pistachios, almonds), finely chopped
  • 1/2 cup sunflower seeds or pumpkin seeds (optional, for added texture)
  • 2 tablespoons olive oil
  • 1/2 cup melted vegan butter (or coconut oil)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon fresh rosemary or thyme, finely chopped
  • 1 tablespoon maple syrup or agave syrup (optional, for a touch of sweetness)
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions:

Prepare the Filling:

    • In a bowl, combine the finely chopped nuts and seeds (if using). Add the cinnamon, cumin, smoked paprika, black pepper, and salt. Stir in the fresh rosemary or thyme for an herby fragrance and flavor. Set aside.

    Prepare the Phyllo Dough:

          • Using a sharp knife, carefully cut the baklava into diamond or square shapes, cutting through all the layers to make serving easier.

          Bake the Baklava:

            Prepare the Syrup:
