  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/4 cup coconut oil, melted (or any neutral oil)
  • 1/4 cup plant-based milk (such as almond, soy, or oat milk)
  • 1/2 cup brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (or gluten-free flour blend for a gluten-free option)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional, for extra warmth)
  • 1/2 cup vegan chocolate chips, plus extra for topping

Instructions:

Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

    Combine Wet Ingredients:

      • In a large mixing bowl, mash the bananas until smooth. Add the melted coconut oil, plant-based milk, brown sugar, and vanilla extract. Stir until well combined.

      Combine Dry Ingredients:

        • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

        Mix Together:

          • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined (avoid overmixing). Fold in the chocolate chips.

          Bake:
