Ingredients:

  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/4 cup melted coconut oil or any neutral oil
  • 1/4 cup plant-based milk (like almond, soy, or oat milk)
  • 1/2 cup brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (or a 1:1 gluten-free flour blend for gluten-free)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup vegan chocolate chips, plus extra for topping

Instructions:

Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

    Mix Wet Ingredients:

      • In a large bowl, mash the bananas until smooth. Add the melted coconut oil, plant-based milk, brown sugar, and vanilla extract. Stir until combined.

      Combine Dry Ingredients:

        • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

        Combine Wet and Dry Ingredients:

          • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined (do not overmix). Fold in the chocolate chips.

          Pour and Bake:

            • Pour the batter into the prepared loaf pan, spreading it evenly. Sprinkle extra chocolate chips on top if desired.
            • Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean (it’s okay if it has some melted chocolate on it!).

            Cool and Serve:
