Ingredients:

  • For the Salad:
  • 1 large head of romaine lettuce, chopped
  • 1/2 cup croutons (store-bought or homemade)
  • 1/4 cup freshly grated Parmesan cheese (optional, or use a vegan alternative)
  • Freshly ground black pepper (to taste)
  • For the Vegetarian Caesar Dressing:
  • 1/2 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)
  • 2 tablespoons mayonnaise (or vegan mayo)
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon capers, finely chopped (for a briny flavor similar to anchovies)
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. Make the Dressing:
  • In a bowl, whisk together the yogurt, mayonnaise, olive oil, Dijon mustard, minced garlic, chopped capers, and lemon juice.
  • Season with salt and pepper to taste and adjust the lemon juice or capers for more brightness or tang if desired.

  • In a large salad bowl, add the chopped romaine lettuce.
  • Drizzle the dressing over the lettuce and toss to coat evenly.

  • Sprinkle the salad with Parmesan cheese and croutons, and add freshly ground black pepper to taste.
