Meatless Lasagna Recipe

Ingredients

  • 12 lasagna noodles (regular or no-boil)
  • 2 cups ricotta cheese

  • 1 medium zucchini, diced

Instructions

  1. Preheat the Oven:
  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with non-stick spray or olive oil.
  1. Prepare the Vegetables:
  • In a skillet, heat the olive oil over medium heat. Add the diced zucchini and bell pepper, and sauté until they are tender, about 5–7 minutes. Stir in the spinach and cook until wilted. Season with salt, pepper, and dried oregano.
  1. Mix the Cheese Filling:
  • In a large mixing bowl, combine the ricotta cheese, eggs, half of the mozzarella cheese, and grated Parmesan cheese. Mix well until smooth.

  • Spread a thin layer of marinara sauce on the bottom of the prepared baking dish. Place 4 lasagna noodles over the sauce.
  • Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables and another layer of marinara sauce.
  • Repeat this layering process: add another layer of noodles, the remaining ricotta mixture, the remaining vegetables, and more marinara sauce.
  • Finish with a final layer of noodles topped with remaining marinara sauce and sprinkle with the remaining mozzarella cheese.
  1. Bake:
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  1. Rest and Serve:
  • Once baked, let the lasagna rest for about 10 minutes before slicing. Garnish with fresh basil if desired.
